Der offizielle Auftakt ist allerdings am Karnevalssonntag morgens um 8 Uhr am Gorriti Platz, wenn eine Musikkapelle gefolgt von einigen Tausend Menschen durch die engen Altstadtstrassen ziehen. Es geht dann nonstop weiter bis Dienstag abend, wenn um 22 Uhr mit der Beerdigung der Sardine der offizielle Schlusspunkt gesetzt wird. Der Karneval von Tolosa gründet sich hauptsächlich auf die Eigeninitiative der Bewohner, die von der Stadtverwaltung teilweise finanziell unterstützt wird. Als während des Franco Regimes das Karnevalfeiern in Spanien weitgehend verboten war, war Tolosa eine der wenigen Orte, die trotzdem weiterfeierten und den Namen Karneval durch Frühlingsfest ersetzten. Seit Anfang der 80er Jahre das Verbot aufgehoben wurde, ist der Besucherandrang etwas zurückgegangen, da jetzt auch in vielen anderen Orten gefeiert wird.
